I've been making my own kefir for 1-4 days a week since 2005. Sometimes every day. They will be slimy, and active as they should be (a good sign of probiotic activity).
You'll get some bigger grains, but some will be smaller to fill the extra space because these are measured by volume.
They're better than those probiotic packets too, because there is no middleman to keep buying from, and they'll last forever as long as you take care of them according to the kefir instructions.
I've been in the natural health world since 2001, and take care of my own health to the point the average person would consider me crazy. I've accomplished many things that the world says are impossible.
Point being... I make all my food myself (including cheese, and I go over a bit of this in the how to make raw cheese video), so I know pretty much everything you can do with kefir grains.

I only sell my own supply, and it's limited. I never sell grains from other people. I will not accept returns unless there was something seriously wrong with the shipping, and the grains became defective in some way. If that happens: tell me within 2 days of delivery. So follow the how to make kefir instructions as soon as you get them. You should not wait long before using them, because that can destroy them eventually.

In 2 Tablespoon increments.
You'll want 2 Tbsp at a bare minimum. This can comfortably make 8oz of kefir per day. Having more will make more at a time, and make it faster.
I suggest starting with 4 Tbsp minimum, but they do grow pretty fast if you use them everyday, so 2 is alright.
